Description

Keto Green Bean Casserole is a delicious low-carb dish perfect for your family dinner or holiday gatherings.

Ingredients

Scale
  • 1 pound fresh green beans, trimmed and cut into bite-sized pieces
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup sliced mushrooms
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 cup crispy bacon bits

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring water to a boil. Add the green beans and cook for 3-5 minutes until bright green and tender-crisp. Drain and set aside.
  3. In a skillet over medium heat, add the diced onion and sauté until translucent, about 3-4 minutes.
  4. Add the sliced mushrooms and minced garlic to the skillet. Cook for another 5 minutes, until the mushrooms are tender.
  5. In a large mixing bowl, combine the heavy cream, salt, black pepper, and garlic powder. Whisk until well combined.
  6. Add the sautéed mushroom mixture and cooked green beans to the mixing bowl. Stir to coat the green beans evenly.
  7. Transfer the green bean mixture into a greased casserole dish. Sprinkle shredded cheddar cheese and bacon bits over the top.
  8. Bake in the preheated oven for 25-30 minutes, until the casserole is bubbly and golden on top.
  9. Remove from the oven and let sit for 5 minutes before serving.
