Description

A delicious baked salmon with creamy spinach.


Ingredients

Scale
  • 4 salmon fillets
  • 200g fresh spinach
  • 200g cream cheese
  • 2 cloves of garlic, minced
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Fresh dill for garnish

Instructions

  1. Preheat the oven to 200°C (392°F).
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt and pepper.
  4. In a bowl, mix the cream cheese with lemon zest and lemon juice. Stir in the wilted spinach and garlic mixture until well combined.
  5. Place the salmon fillets on a lined baking tray. Season with salt and pepper.
  6. Spread the cream cheese and spinach mixture generously over each salmon fillet.
  7. Drizzle a little olive oil on top of the fillets and sprinkle fresh dill for garnish.
  8. Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
  9. Remove from the oven and let it rest for a few minutes before serving.
