A delicious baked salmon with creamy spinach.
Ingredients

- 4 salmon fillets
- 200g fresh spinach
- 200g cream cheese
- 2 cloves of garlic, minced
- 1 lemon, zested and juiced
- Salt and pepper to taste
- Olive oil for drizzling
- Fresh dill for garnish
Instructions
- Preheat the oven to 200°C (392°F).
- In a large skillet, heat a drizzle of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt and pepper.
- In a bowl, mix the cream cheese with lemon zest and lemon juice. Stir in the wilted spinach and garlic mixture until well combined.
- Place the salmon fillets on a lined baking tray. Season with salt and pepper.
- Spread the cream cheese and spinach mixture generously over each salmon fillet.
- Drizzle a little olive oil on top of the fillets and sprinkle fresh dill for garnish.
- Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and let it rest for a few minutes before serving.
Notes
- Ensure the salmon is fresh for best flavor.
- Adjust seasoning to taste.
- Can serve with a side of vegetables or rice.
