Description

These Baked Ground Beef Tacos are an easy and satisfying meal with seasoned beef, melted cheese, and crispy tortillas, perfect for busy weeknights.

Ingredients

Scale
  • 1 pound 90% lean ground beef (substitute with ground turkey for a leaner option)
  • 1 (1-ounce) packet taco seasoning (or make your own with chili powder, cumin, garlic powder, oregano, and paprika)
  • 2/3 cup water
  • 1½ cups shredded cheddar cheese (Mexican blend works great too)
  • 8 (6-inch) whole wheat flour tortillas, room temperature (or use corn tortillas for a gluten-free option)
  • ½ cup finely diced white onion (red onion provides a nice color contrast)
  • 1 cup diced tomatoes
  • 2 cups shredded romaine lettuce
  • Salsa (or pico de gallo), sour cream, and guacamole, for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a large skillet over medium-high heat, brown the ground beef, breaking it into small pieces. Cook until no pink remains, about 5-7 minutes. Drain excess fat if necessary.
  3. Add the taco seasoning and water to the skillet. Stir well. Reduce heat to medium and simmer for 3-4 minutes until thick.
  4. Lay tortillas on a flat surface. Distribute beef mixture evenly among tortillas, placing it on one half. Sprinkle cheese on top.
  5. Fold tortillas over to create a half-moon shape. Arrange them in the prepared baking dish, fitting snugly.
  6. Bake for 10-12 minutes, or until tortillas are crisp and cheese is melted.
  7. While baking, chop lettuce, dice tomatoes and onions, and prepare condiments.
  8. Remove tacos from oven and let cool for 2-3 minutes. Serve hot with toppings on the side.

Notes

  • For a healthier version, use lean ground turkey or chicken instead of beef.
  • Plant-based meat alternatives work well for vegetarian options.
  • For crispier shells, brush the outside of the tortillas lightly with oil before baking.
  • Refrigerate leftover tacos for up to 3 days or freeze the cooked taco meat for up to 3 months.
