Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the almond flour, coconut flour, sugar, baking powder, and salt. Whisk until well blended.
- In another bowl, whisk together the melted butter, eggs, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the chocolate chips or your chosen mix-ins.
- Using your hands, form the dough into a thick disc about 1 inch high. Place it on the prepared baking sheet.
- Cut the dough into 8 triangles, but do not separate them; they will bake together.
- Bake in the preheated oven for 20-25 minutes, or until golden brown on the edges.
- Remove from the oven and allow to cool for 10 minutes before slicing through the cut lines to separate the scones.
- Serve warm or at room temperature.
