Description

Simple Sweet Potato Soup combines sweet potatoes, ginger, and lime to create a comforting and flavorful dish. It’s easy to make and perfect for casual dinners or special occasions.


Ingredients

  • 6 medium sweet potatoes, peeled and chopped (about 2.5 lbs)
  • 1 tablespoon minced fresh ginger (or 1 teaspoon ground ginger)
  • 2 cups chicken or vegetable stock
  • 1 cup water
  • Juice of 1 lime (about 2 tablespoons)
  • 2 cups milk or cream (substitute coconut milk for dairy-free option)
  • Salt and pepper to taste
  • Optional garnishes: chopped fresh herbs, toasted pumpkin seeds, swirl of cream, smoked paprika

Instructions

  1. Thoroughly wash, peel, and chop the sweet potatoes into roughly 1-inch cubes.
  2. Place the chopped sweet potatoes, minced ginger, stock, and 1 cup of water in a large pot. Bring to a boil over medium-high heat.
  3. Once boiling, reduce heat to medium-low and simmer, partially covered, for 20-25 minutes, or until tender.
  4. Remove from heat and cool slightly. Puree the soup with an immersion blender, or transfer to a standard blender in batches, blending until smooth.
  5. Return the pureed soup to the pot, if necessary. Stir in the lime juice and gradually add milk or cream. Gently warm without boiling.
  6. Season with salt and pepper. Serve in bowls with your favorite garnishes.

Notes

  • Roast sweet potatoes for deeper flavor by baking at 400°F for 25-30 minutes before adding to the soup.
  • Add a pinch of cinnamon, nutmeg, or cayenne for extra warmth.
  • Reserve some diced roasted sweet potatoes to add texture to the finished soup.
  • Lime juice is key for balancing sweetness—don’t skip it!
