- 6 medium sweet potatoes, peeled and chopped (about 2.5 lbs)
- 1 tablespoon minced fresh ginger (or 1 teaspoon ground ginger)
- 2 cups chicken or vegetable stock
- 1 cup water
- Juice of 1 lime (about 2 tablespoons)
- 2 cups milk or cream (substitute coconut milk for dairy-free option)
- Salt and pepper to taste
- Optional garnishes: chopped fresh herbs, toasted pumpkin seeds, swirl of cream, smoked paprika
Instructions
- Thoroughly wash, peel, and chop the sweet potatoes into roughly 1-inch cubes.
- Place the chopped sweet potatoes, minced ginger, stock, and 1 cup of water in a large pot. Bring to a boil over medium-high heat.
- Once boiling, reduce heat to medium-low and simmer, partially covered, for 20-25 minutes, or until tender.
- Remove from heat and cool slightly. Puree the soup with an immersion blender, or transfer to a standard blender in batches, blending until smooth.
- Return the pureed soup to the pot, if necessary. Stir in the lime juice and gradually add milk or cream. Gently warm without boiling.
- Season with salt and pepper. Serve in bowls with your favorite garnishes.
Notes
- Roast sweet potatoes for deeper flavor by baking at 400°F for 25-30 minutes before adding to the soup.
- Add a pinch of cinnamon, nutmeg, or cayenne for extra warmth.
- Reserve some diced roasted sweet potatoes to add texture to the finished soup.
- Lime juice is key for balancing sweetness—don’t skip it!
