- 4 salmon fillets
- 2 cups fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine the chopped spinach, cream cheese, Parmesan cheese, minced garlic, lemon juice, salt, and pepper. Mix until well combined.
- Place the salmon fillets on a clean surface. Using a sharp knife, create a pocket in each fillet by cutting horizontally, ensuring not to cut all the way through.
- Stuff each salmon fillet with the spinach mixture, pressing down gently to secure the filling inside.
- Heat a skillet over medium heat and add a drizzle of olive oil. Once hot, place the stuffed salmon fillets in the skillet, skin-side down, and sear for about 3 minutes until the skin is crispy.
- Carefully flip the fillets and transfer the skillet to the preheated oven. Bake for an additional 10-12 minutes, or until the salmon is cooked through.
- Remove from the oven and allow to rest for a few minutes before serving.
