Ingredients

  • 4 salmon fillets
  • 2 cups fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine the chopped spinach, cream cheese, Parmesan cheese, minced garlic, lemon juice, salt, and pepper. Mix until well combined.
  3. Place the salmon fillets on a clean surface. Using a sharp knife, create a pocket in each fillet by cutting horizontally, ensuring not to cut all the way through.
  4. Stuff each salmon fillet with the spinach mixture, pressing down gently to secure the filling inside.
  5. Heat a skillet over medium heat and add a drizzle of olive oil. Once hot, place the stuffed salmon fillets in the skillet, skin-side down, and sear for about 3 minutes until the skin is crispy.
  6. Carefully flip the fillets and transfer the skillet to the preheated oven. Bake for an additional 10-12 minutes, or until the salmon is cooked through.
  7. Remove from the oven and allow to rest for a few minutes before serving.
