Description

A healthy and delicious spaghetti squash dish topped with ground turkey and savory herbs.


Ingredients

  • 1 medium spaghetti squash
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds.
  3. Drizzle the inside of the squash with olive oil, and season with salt and pepper.
  4. Place the squash cut-side down on a baking sheet and roast for about 30-40 minutes, or until the flesh is tender and easily shredded with a fork.
  5. While the squash is roasting, heat olive oil in a large skillet over medium heat.
  6. Add the chopped onion and garlic, sauté until the onion is translucent, about 5 minutes.
  7. Add the ground turkey to the skillet, breaking it apart with a spoon, and cook until browned and cooked through.
  8. Stir in the diced tomatoes and dried Italian herbs, season with salt and pepper, and let it simmer for about 10 minutes.
  9. Once the spaghetti squash is done, remove it from the oven and use a fork to shred the flesh into spaghetti-like strands.
  10. Serve the turkey mixture over the spaghetti squash and sprinkle with grated Parmesan cheese.

  • For added flavor, try using fresh herbs instead of dried.
