Description
A healthy and delicious spaghetti squash dish topped with ground turkey and savory herbs.
Ingredients

- 1 medium spaghetti squash
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Drizzle the inside of the squash with olive oil, and season with salt and pepper.
- Place the squash cut-side down on a baking sheet and roast for about 30-40 minutes, or until the flesh is tender and easily shredded with a fork.
- While the squash is roasting, heat olive oil in a large skillet over medium heat.
- Add the chopped onion and garlic, sauté until the onion is translucent, about 5 minutes.
- Add the ground turkey to the skillet, breaking it apart with a spoon, and cook until browned and cooked through.
- Stir in the diced tomatoes and dried Italian herbs, season with salt and pepper, and let it simmer for about 10 minutes.
- Once the spaghetti squash is done, remove it from the oven and use a fork to shred the flesh into spaghetti-like strands.
- Serve the turkey mixture over the spaghetti squash and sprinkle with grated Parmesan cheese.
Notes
- For added flavor, try using fresh herbs instead of dried.
- Feel free to add vegetables like bell peppers or spinach to the turkey mix.
