- 1.5 lbs baby potatoes, washed and halved
- 3 tablespoons olive oil
- 4–5 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped

- Salt to taste
- Black pepper to taste
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Wash baby potatoes thoroughly and halve them.
- Heat a cast-iron or heavy-bottomed skillet over medium-high heat.
- Add olive oil to the skillet. Wait until the oil shimmers, indicated by slight ripples on the surface.
- Carefully place the potato halves cut side down in the hot skillet.
- Cook undisturbed for 4-5 minutes to allow a golden-brown crust to form on the bottom.
- Check for doneness by piercing a potato with a fork; it should slide in easily.
- Add the minced garlic to the skillet. Stir gently to combine with the potatoes.
- Cook for an additional 2-3 minutes, stirring occasionally, until the garlic is fragrant and lightly golden. Avoid burning the garlic.
- Add the chopped fresh rosemary and thyme to the skillet. Stir to distribute the herbs evenly.
- Continue to cook, stirring every 3-4 minutes, until the potatoes are tender and crispy with a golden-brown color on all sides.
- Season generously with salt and black pepper to taste.
- Remove the skillet from heat.
- Garnish with freshly chopped parsley before serving.
Notes
- For best results, use a cast-iron skillet.
- Avoid overcrowding the skillet to ensure proper browning. Cook in batches if necessary.
- You can substitute dried herbs for fresh, using about 2 teaspoons of dried rosemary and 2 teaspoons of dried thyme.
