Ingredients

  • 1.5 lbs baby potatoes, washed and halved
  • 3 tablespoons olive oil
  • 45 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped

  • Black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Wash baby potatoes thoroughly and halve them.
  2. Heat a cast-iron or heavy-bottomed skillet over medium-high heat.
  3. Add olive oil to the skillet. Wait until the oil shimmers, indicated by slight ripples on the surface.
  4. Carefully place the potato halves cut side down in the hot skillet.
  5. Cook undisturbed for 4-5 minutes to allow a golden-brown crust to form on the bottom.
  6. Check for doneness by piercing a potato with a fork; it should slide in easily.
  7. Add the minced garlic to the skillet. Stir gently to combine with the potatoes.
  8. Cook for an additional 2-3 minutes, stirring occasionally, until the garlic is fragrant and lightly golden. Avoid burning the garlic.
  9. Add the chopped fresh rosemary and thyme to the skillet. Stir to distribute the herbs evenly.
  10. Continue to cook, stirring every 3-4 minutes, until the potatoes are tender and crispy with a golden-brown color on all sides.
  11. Season generously with salt and black pepper to taste.
  12. Remove the skillet from heat.
  13. Garnish with freshly chopped parsley before serving.

  • For best results, use a cast-iron skillet.
  • Avoid overcrowding the skillet to ensure proper browning. Cook in batches if necessary.
