Instructions
- In a mixing bowl, combine the peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well blended.
- Add the rolled oats and a pinch of salt to the mixture. Mix thoroughly until all ingredients are combined.
- Use a tablespoon or cookie scoop to portion out the dough onto a parchment-lined baking sheet.
- Flatten each cookie slightly with the back of a fork or your hands for a more traditional cookie shape.
- Place the cookies in the refrigerator for at least 30 minutes to set.
