- 1/2 cup pistachio pudding mix (sugar-free)
- 1/2 cup chopped pistachios (for garnish)
Instructions
- In a large mixing bowl, combine the softened cream cheese and powdered erythritol. Beat until creamy and smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gradually fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream.
- Add the sugar-free pistachio pudding mix to the mixture and gently fold until fully incorporated and a uniform color is achieved.
- Once mixed, taste and adjust sweetness if necessary by adding more erythritol.
- Scoop the cheesecake fluff into serving dishes or glasses.
- Top with chopped pistachios for garnish.
- Refrigerate for at least 1 hour to chill before serving.
