- 1/4 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 pounds skinless boneless chicken thighs, cut into 1 1/2 inch pieces
- 2/3 cup Italian breadcrumbs
- 2/3 cup panko
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- Olive oil cooking spray
- 4 tablespoons butter
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- 2 teaspoons finely chopped fresh parsley
Instructions
- In a large bowl, whisk together the olive oil, white wine, lemon juice, lemon zest, minced garlic, red pepper flakes, oregano, salt, and pepper.
- Add chicken pieces to the marinade; mix well. Cover and refrigerate for 30 minutes to 4 hours.
- In a shallow dish, mix breadcrumbs, panko, Parmesan cheese, garlic powder, salt, and pepper.
- Remove chicken from marinade and coat each piece in breadcrumb mixture.
- Thread coated chicken pieces onto skewers, leaving space between pieces.
- Grill: Preheat to medium-high; spray skewers with olive oil; grill 4-5 minutes per side until done. Oven: Preheat to 425°F; place skewers on a baking sheet; spray with olive oil; bake for 20-25 minutes, turning halfway.
- Melt butter in a saucepan; add minced garlic and cook until fragrant. Stir in lemon juice and parsley; remove from heat.
- Serve the cooked skewers drizzled with lemon garlic butter sauce, garnished with parsley and lemon wedges.
