Description

  • 1/2 cup extra-virgin olive oil
  • 1/4 cup white wine (Pinot Grigio or chicken broth for alcohol-free)
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 3 cloves garlic, finely minced
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 pounds skinless boneless chicken thighs, cut into 1 1/2 inch pieces
  • 2/3 cup Italian breadcrumbs
  • 2/3 cup panko
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • Olive oil cooking spray
  • 4 tablespoons butter
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 2 teaspoons finely chopped fresh parsley

Instructions

  1. In a large bowl, whisk together the olive oil, white wine, lemon juice, lemon zest, minced garlic, red pepper flakes, oregano, salt, and pepper.
  2. Add chicken pieces to the marinade; mix well. Cover and refrigerate for 30 minutes to 4 hours.
  3. In a shallow dish, mix breadcrumbs, panko, Parmesan cheese, garlic powder, salt, and pepper.
  4. Remove chicken from marinade and coat each piece in breadcrumb mixture.
  5. Thread coated chicken pieces onto skewers, leaving space between pieces.
  6. Grill: Preheat to medium-high; spray skewers with olive oil; grill 4-5 minutes per side until done. Oven: Preheat to 425°F; place skewers on a baking sheet; spray with olive oil; bake for 20-25 minutes, turning halfway.
  7. Melt butter in a saucepan; add minced garlic and cook until fragrant. Stir in lemon juice and parsley; remove from heat.
  8. Serve the cooked skewers drizzled with lemon garlic butter sauce, garnished with parsley and lemon wedges.
