Instructions
- Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
- In a large mixing bowl, combine almond flour, erythritol, baking powder, and salt. Mix well.
- In another bowl, whisk together the eggs, almond milk, and vanilla extract until smooth.
- Gradually pour the wet ingredients into the dry ingredients, mixing until fully combined.
- Gently fold in the chopped strawberries until evenly distributed in the batter.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Serve with whipped cream if desired.
