Keto Strawberry Bars are a delicious low-carb treat that will satisfy your cheesecake cravings without the guilt!

- 1 cup almond flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup granulated erythritol
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1 cup fresh strawberries, chopped
- 1 teaspoon vanilla extract
- 2 large eggs
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper.
- In a mixing bowl, combine the almond flour, cocoa powder, and erythritol. Mix well.
- Pour in the melted butter and stir until the mixture is crumbly and well combined.
- Press the mixture evenly into the bottom of the prepared baking pan to form the crust.
- In another bowl, beat the softened cream cheese until smooth.
- Add the sour cream, vanilla extract, and eggs to the cream cheese, mixing until fully incorporated.
- Gently fold in the chopped strawberries.
- Pour the cream cheese mixture over the crust in the baking pan and smooth the top with a spatula.
- Bake in the preheated oven for 30-35 minutes or until the center is set.
- Allow the bars to cool in the pan before transferring to the refrigerator to chill for at least 2 hours.
- Once chilled, cut into squares and serve.
Notes
- Store leftovers in the refrigerator.
