- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1/2 cup almond flour
- 2 large eggs, beaten
- 1/4 cup soy sauce
- 1/4 cup orange juice
- 1/4 cup sugar-free sweetener
- 1 tablespoon rice vinegar
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 2 tablespoons sesame oil
- 1 green onion, chopped for garnish
Instructions
- In a bowl, whisk together the almond flour, garlic powder, and ginger powder.
- Dip each piece of chicken into the beaten eggs, then coat with the almond flour mixture.
- Heat sesame oil in a large skillet over medium heat.
- Add the coated chicken pieces to the skillet and cook until golden brown and fully cooked, about 7-10 minutes.
- In a separate bowl, combine soy sauce, orange juice, sugar-free sweetener, and rice vinegar. Mix well.
- Once the chicken is cooked, pour the orange sauce over the chicken in the skillet and stir to coat evenly.
- Cook for an additional 2-3 minutes until the sauce thickens slightly.
- Serve hot, garnished with chopped green onion.
