Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/2 cup almond flour
  • 2 large eggs, beaten
  • 1/4 cup soy sauce
  • 1/4 cup orange juice
  • 1/4 cup sugar-free sweetener
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 2 tablespoons sesame oil
  • 1 green onion, chopped for garnish

Instructions

  1. In a bowl, whisk together the almond flour, garlic powder, and ginger powder.
  2. Dip each piece of chicken into the beaten eggs, then coat with the almond flour mixture.
  3. Heat sesame oil in a large skillet over medium heat.
  4. Add the coated chicken pieces to the skillet and cook until golden brown and fully cooked, about 7-10 minutes.
  5. In a separate bowl, combine soy sauce, orange juice, sugar-free sweetener, and rice vinegar. Mix well.
  6. Once the chicken is cooked, pour the orange sauce over the chicken in the skillet and stir to coat evenly.
  7. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  8. Serve hot, garnished with chopped green onion.
