- 1/2 cup powdered erythritol
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup almond flour
Instructions
- Preheat your oven to 325°F (163°C).
- In a large bowl, combine the softened cream cheese, powdered erythritol, and vanilla extract. Mix until smooth and creamy.
- Add the eggs, one at a time, mixing well after each addition until fully incorporated.
- Stir in the almond flour until the mixture is well combined.
- Line a mini muffin tin with paper liners or grease it with cooking spray.
- Spoon the cheesecake mixture into each muffin cup, filling them about 3/4 full.
- Bake in the preheated oven for 18-20 minutes or until the edges are lightly golden and the center is set.
- Remove from the oven and allow to cool at room temperature before transferring them to the refrigerator.
- Chill for at least 1 hour before serving to let the flavors meld.
