Ingredients

  • ½ cup granulated erythritol
  • ½ cup unsalted butter, softened
  • 4 large eggs
  • ¼ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • ¼ cup unsalted butter, softened
  • ½ cup powdered erythritol
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated erythritol until light and fluffy.
  3. Add in the eggs, one at a time, beating well after each addition. Mix in the lemon juice, lemon zest, and vanilla extract.
  4. In a separate bowl, combine the almond flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
  7. While the cake is baking, prepare the cream cheese frosting. In a medium bowl, beat together the softened cream cheese and unsalted butter until smooth.
  8. Gradually add the powdered erythritol, lemon juice, and vanilla extract. Mix until fluffy and well combined.
  9. Once the cake has cooled completely, spread the cream cheese frosting on top of the cake using a spatula.
