- 2 tablespoons brown sugar substitute (for caramelizing on top)
Instructions
- Preheat your oven to 325°F (160°C).
- In a medium saucepan, heat the heavy cream over medium heat until just steaming, but not boiling.
- In a mixing bowl, whisk together the egg yolks, erythritol, vanilla extract, and a pinch of salt until well combined.
- Slowly pour the hot cream into the egg mixture, whisking continuously to avoid curdling the eggs.
- Strain the mixture through a fine mesh sieve into a large measuring cup or bowl to ensure a smooth custard.
- Place ramekins in a baking dish. Pour the custard mixture evenly into the ramekins.
- Add hot water to the baking dish, filling it until it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for 25-30 minutes, or until the custards are set but still slightly jiggly in the center.
- Remove the ramekins from the water bath and let cool to room temperature. Refrigerate for at least 2 hours or until chilled.
- Before serving, sprinkle a thin layer of brown sugar substitute on top of each custard. Use a kitchen torch to caramelize the sugar until it forms a crispy topping. Let cool for a moment before serving.
