Ingredients

  • 2 cups heavy cream
  • 4 large egg yolks
  • 1/2 cup erythritol or any other sugar substitute
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • 2 tablespoons brown sugar substitute (for caramelizing on top)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium saucepan, heat the heavy cream over medium heat until just steaming, but not boiling.
  3. In a mixing bowl, whisk together the egg yolks, erythritol, vanilla extract, and a pinch of salt until well combined.
  4. Slowly pour the hot cream into the egg mixture, whisking continuously to avoid curdling the eggs.
  5. Strain the mixture through a fine mesh sieve into a large measuring cup or bowl to ensure a smooth custard.
  6. Place ramekins in a baking dish. Pour the custard mixture evenly into the ramekins.
  7. Add hot water to the baking dish, filling it until it reaches halfway up the sides of the ramekins.
  8. Bake in the preheated oven for 25-30 minutes, or until the custards are set but still slightly jiggly in the center.
  9. Remove the ramekins from the water bath and let cool to room temperature. Refrigerate for at least 2 hours or until chilled.
  10. Before serving, sprinkle a thin layer of brown sugar substitute on top of each custard. Use a kitchen torch to caramelize the sugar until it forms a crispy topping. Let cool for a moment before serving.
