- 1 cup almond flour
- 1/4 cup granulated erythritol
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon vanilla extract
- 2 large eggs
- 1 cup heavy cream
- 1/4 teaspoon salt
- 2 tablespoons brown erythritol (for topping)
Instructions
- Preheat the oven to 325°F (160°C) and grease an 8×8 inch baking dish.
- In a medium bowl, combine the almond flour, granulated erythritol, and melted butter. Mix until well combined.
- Press the almond flour mixture evenly into the bottom of the prepared baking dish to create the crust layer.
- In a separate mixing bowl, whisk together the eggs, heavy cream, vanilla extract, and salt until smooth.
- Pour the egg mixture over the crust in the baking dish, spreading it evenly.
- Bake in the preheated oven for 25-30 minutes, or until the center is set and a toothpick inserted into the center comes out clean.
- Remove from the oven and allow to cool to room temperature.
- Once cooled, sprinkle the brown erythritol evenly over the top of the bars.
- Using a kitchen torch, carefully brûlée the erythritol topping until it forms a crispy, caramelized layer. Alternatively, place the bars under a broiler for 2-3 minutes, watching closely to prevent burning.
- Allow the bars to cool and set before slicing into squares.
Notes
- Keep a close eye on the bars when broiling to avoid burning.
