Description

Keto Chicken Caprese Casserole is a healthy blend of shredded chicken, cherry tomatoes, mozzarella cheese, and fresh basil, baked to perfection.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup fresh basil, chopped
  • 1/4 cup balsamic vinegar
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, cherry tomatoes, mozzarella cheese, and fresh basil.
  3. Add the balsamic vinegar, garlic powder, salt, and pepper to the chicken mixture and stir until well combined.
  4. Transfer the mixture into a greased baking dish.
  5. Drizzle a little olive oil over the top of the casserole.
  6. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving.
