- 1 pound chicken breast, diced
- 1 pound shrimp, peeled and deveined
- 1 tablespoon Cajun seasoning
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 1 cup heavy cream
- 2 cups spinach
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and cook until translucent, about 5 minutes.
- Stir in the minced garlic and sauté for another minute.
- Add the diced chicken breast to the pot and season with Cajun seasoning, salt, and pepper. Cook until the chicken is browned, about 7–10 minutes.
- Pour in the chicken broth and diced tomatoes, bringing the mixture to a boil.
- Reduce the heat and let it simmer for 15 minutes to allow the flavors to meld.
- Add the shrimp to the pot and cook until they turn pink and opaque, about 3–5 minutes.
- Stir in the heavy cream and spinach, allowing the spinach to wilt for about 2 minutes.
- Taste and adjust seasoning if necessary before serving.
