Ingredients

  • 1 pound chicken breast, diced
  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon Cajun seasoning
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup heavy cream
  • 2 cups spinach
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic and sauté for another minute.
  4. Add the diced chicken breast to the pot and season with Cajun seasoning, salt, and pepper. Cook until the chicken is browned, about 7–10 minutes.
  5. Pour in the chicken broth and diced tomatoes, bringing the mixture to a boil.
  6. Reduce the heat and let it simmer for 15 minutes to allow the flavors to meld.
  7. Add the shrimp to the pot and cook until they turn pink and opaque, about 3–5 minutes.
  8. Stir in the heavy cream and spinach, allowing the spinach to wilt for about 2 minutes.
  9. Taste and adjust seasoning if necessary before serving.
