- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 2 large eggs
- 4 tablespoons water
- 2 tablespoons olive oil
Instructions
- In a large mixing bowl, combine the almond flour, coconut flour, salt, and baking powder. Mix well to ensure even distribution of dry ingredients.
- In a separate bowl, whisk together the eggs, water, and olive oil until smooth.
- Gradually add the wet ingredients to the dry mixture, stirring until a dough forms. The dough should be slightly sticky but manageable.
- Divide the dough into 8 equal portions and roll each portion into a ball.
- Preheat a skillet or frying pan over medium heat. Lightly grease it with oil or spray.
- Using a rolling pin, flatten each dough ball between two sheets of parchment paper until they are about 1/8 inch thick.
- Place the flattened tortilla in the preheated skillet and cook for about 1-2 minutes on each side, or until it is golden brown and cooked through.
- Repeat the process with the remaining dough portions, keeping finished tortillas warm in a clean kitchen towel.
Notes
- These tortillas can be used for tacos, wraps, or any dish that requires a tortilla.
- Store leftovers in an airtight container in the refrigerator.
