Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 large eggs
  • 4 tablespoons water
  • 2 tablespoons olive oil

Instructions

  1. In a large mixing bowl, combine the almond flour, coconut flour, salt, and baking powder. Mix well to ensure even distribution of dry ingredients.
  2. In a separate bowl, whisk together the eggs, water, and olive oil until smooth.
  3. Gradually add the wet ingredients to the dry mixture, stirring until a dough forms. The dough should be slightly sticky but manageable.
  4. Divide the dough into 8 equal portions and roll each portion into a ball.
  5. Preheat a skillet or frying pan over medium heat. Lightly grease it with oil or spray.
  6. Using a rolling pin, flatten each dough ball between two sheets of parchment paper until they are about 1/8 inch thick.
  7. Place the flattened tortilla in the preheated skillet and cook for about 1-2 minutes on each side, or until it is golden brown and cooked through.
  8. Repeat the process with the remaining dough portions, keeping finished tortillas warm in a clean kitchen towel.
