Ingredients

  • 1 pound lean ground beef (90% lean)
  • ½ cup grated Parmesan cheese (freshly grated works best)
  • ½ cup shredded mozzarella cheese
  • 1 large egg, lightly beaten
  • 2 tablespoons heavy whipping cream
  • 1 garlic clove, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)
  • 1 can (8 ounces) tomato sauce with basil, garlic, and oregano
  • 2 tablespoons prepared pesto
  • ¼ cup heavy whipping cream

Instructions

  1. In a large mixing bowl, combine ground beef, Parmesan cheese, mozzarella cheese, beaten egg, heavy cream, minced garlic, Italian seasoning, salt, and pepper.
  2. Mix gently using your hands until just combined. Be careful not to overmix.
  3. Let the mixture rest for 10 minutes in the refrigerator.
  4. Preheat your air fryer to 380°F (190°C) for 3 minutes.
  5. Form the meat mixture into 16 evenly-sized balls, about 1½ inches in diameter.
  6. Lightly spray the air fryer basket with olive oil or avocado oil spray.
  7. Place the meatballs in the air fryer basket without touching, in batches if necessary.
  8. Cook for 10-12 minutes, shaking the basket halfway through, until they reach an internal temperature of 165°F (74°C).
  9. While cooking, combine tomato sauce, pesto, and heavy cream in a saucepan over medium-low heat, simmering for 5 minutes.
  10. Serve the meatballs immediately with the warm sauce.

  • The secret to tender meatballs is not overworking the mixture.
  • Wet hands slightly when rolling the meatballs to prevent sticking.
