Description

These Greek Garlic-Lemon Potatoes are a delicious Mediterranean side dish featuring crispy exteriors and tender interiors infused with lemon, garlic, and oregano. Perfect for any meal!


Ingredients

  • 3 pounds potatoes (Yukon Gold or Russet), peeled and cut into thick wedges
  • 3 cups hot water
  • ½ cup fresh lemon juice (approximately 34 lemons)
  • â…“ cup vegetable oil
  • 1 tablespoon olive oil (for extra flavor)
  • 1 ½ teaspoons dried oregano (or 1 tablespoon fresh)
  • 2 teaspoons salt
  • ½ teaspoon freshly ground black pepper
  • 2 cloves garlic, minced (or up to 4 for garlic lovers)
  • ¼ cup chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Peel the potatoes and cut them into thick wedges.
  2. In a large roasting pan, combine the hot water, lemon juice, vegetable oil, olive oil, dried oregano, salt, pepper, and minced garlic. Whisk together until well combined.
  3. Add the potato wedges to the marinade in the roasting pan, tossing gently to coat. Arrange in a single layer.
  4. Cover the roasting pan with aluminum foil and bake for 40 minutes.
  5. After 40 minutes, remove the foil and continue baking uncovered for an additional 20-30 minutes, until golden and the liquid is mostly absorbed.
  6. Remove from the oven, sprinkle with fresh chopped parsley, and allow to cool slightly before serving.

Notes

  • For an extra authentic touch, use Greek olive oil instead of vegetable oil.
  • Yukon Gold potatoes hold their shape better, while Russet potatoes give a fluffier interior.
  • Add 1 teaspoon of dried rosemary or thyme for a flavor variation.
