- 2 cups almond flour
- 1/2 cup coconut flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 2 large eggs
- 1/4 cup unsweetened almond milk
- 1/4 cup melted coconut oil
- 1/4 cup erythritol or preferred sweetener
- 1 tablespoon cinnamon
- 1/4 cup softened coconut oil for filling
- 1/4 cup erythritol for filling
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
- In a large mixing bowl, combine almond flour, coconut flour, baking powder, salt, and baking soda. Mix well.
- In a separate bowl, beat the eggs and mix in almond milk and melted coconut oil. Add the erythritol and combine thoroughly.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too sticky, add a little more almond flour.
- Place the dough on a piece of parchment paper and use a rolling pin to roll it out into a rectangle about 1/4 inch thick.
- For the filling, mix softened coconut oil, erythritol, and cinnamon in a small bowl until smooth.
- Spread the filling evenly over the rolled-out dough.
- Starting from one end, carefully roll the dough into a log.
- Slice the log into 8 equal pieces and place them onto the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes or until golden brown.
- Allow the cinnamon rolls to cool for a few minutes before serving.
