Fluffy Paleo & Keto Cinnamon Rolls are a guilt-free dessert option perfect for satisfying sweet cravings while adhering to a low-carb diet.


Ingredients

  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 large eggs
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 1/4 cup erythritol or preferred sweetener
  • 1 tablespoon cinnamon
  • 1/4 cup softened coconut oil for filling
  • 1/4 cup erythritol for filling

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  2. In a large mixing bowl, combine almond flour, coconut flour, baking powder, salt, and baking soda. Mix well.
  3. In a separate bowl, beat the eggs and mix in almond milk and melted coconut oil. Add the erythritol and combine thoroughly.
  4. Pour the wet ingredients into the dry ingredients and mix until a dough forms. If the dough is too sticky, add a little more almond flour.
  5. Place the dough on a piece of parchment paper and use a rolling pin to roll it out into a rectangle about 1/4 inch thick.
  6. For the filling, mix softened coconut oil, erythritol, and cinnamon in a small bowl until smooth.
  7. Spread the filling evenly over the rolled-out dough.
  8. Starting from one end, carefully roll the dough into a log.
  9. Slice the log into 8 equal pieces and place them onto the prepared baking sheet.
  10. Bake in the preheated oven for 20-25 minutes or until golden brown.
  11. Allow the cinnamon rolls to cool for a few minutes before serving.
