- 2 cups almond flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup erythritol (or preferred low-carb sweetener)
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 3 large eggs
- 1/4 cup powdered erythritol
Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine almond flour, unsweetened cocoa powder, erythritol, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to create the crust. Bake for 10 minutes, then allow to cool.
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add sour cream, vanilla extract, and powdered erythritol to the cream cheese and mix until fully incorporated.
- Add the eggs one at a time, mixing gently after each addition until just combined.
- Pour the cream cheese mixture over the cooled crust.
- Bake in the preheated oven for 40-50 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove from the oven and let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight before serving.
Notes
- Serve chilled for the best texture.
- Can be topped with fresh berries or sugar-free chocolate sauce.
