- 1 cup coconut milk
- 2 tablespoons curry powder
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated

- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large bowl, combine the ground meat, minced garlic, grated ginger, salt, and pepper. Mix well and form into small meatballs, about 1 inch in diameter.
- Heat the coconut oil in a large skillet over medium heat. Add the chopped onion and sauté until softened, about 3-5 minutes.
- Add the meatballs to the skillet and cook until browned on all sides, about 6-8 minutes.
- Sprinkle the curry powder over the meatballs and stir to coat them evenly.
- Pour in the coconut milk and bring to a simmer. Reduce heat to low and let it cook for 15-20 minutes, allowing the flavors to meld and the sauce to thicken.
- Taste and adjust the seasoning with more salt and pepper if needed.
- Serve warm, garnished with fresh cilantro.
