- 2 pounds beef chuck, cut into 1-inch cubes
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil (optional, for searing)
- 1 large onion, chopped
- 3 carrots, peeled and chopped
- 3 potatoes, peeled and cubed
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
Instructions
- Season beef chuck cubes with salt and pepper.
- Optional: Heat olive oil in a skillet over medium-high heat and sear beef cubes until browned on all sides.
- Place chopped onions in the bottom of the slow cooker.
- Add the seared (or raw) beef cubes on top of the onions.
- Distribute chopped carrots and cubed potatoes over the beef.
- Sprinkle minced garlic, dried thyme, dried rosemary, and bay leaves over the vegetables.
- In a separate bowl, whisk together beef broth, tomato paste, and Worcestershire sauce until smooth.
- Pour the broth mixture over the ingredients in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender and vegetables are cooked through.
- Remove bay leaves before serving. Taste and adjust seasoning if needed.
- For a thicker stew, remove the lid during the last 30 minutes of cooking or thicken with a cornstarch slurry.

- Searing the beef before adding it to the slow cooker can enhance flavor and texture.
- For a richer flavor, sauté the onions and garlic before adding them to the slow cooker.
