Description

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil (optional, for searing)
  • 1 large onion, chopped
  • 3 carrots, peeled and chopped
  • 3 potatoes, peeled and cubed
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Season beef chuck cubes with salt and pepper.
  2. Optional: Heat olive oil in a skillet over medium-high heat and sear beef cubes until browned on all sides.
  3. Place chopped onions in the bottom of the slow cooker.
  4. Add the seared (or raw) beef cubes on top of the onions.
  5. Distribute chopped carrots and cubed potatoes over the beef.
  6. Sprinkle minced garlic, dried thyme, dried rosemary, and bay leaves over the vegetables.
  7. In a separate bowl, whisk together beef broth, tomato paste, and Worcestershire sauce until smooth.
  8. Pour the broth mixture over the ingredients in the slow cooker.
  9. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender and vegetables are cooked through.
  10. Remove bay leaves before serving. Taste and adjust seasoning if needed.
  11. For a thicker stew, remove the lid during the last 30 minutes of cooking or thicken with a cornstarch slurry.
