Description

A light and fluffy dessert that is low in carbohydrates and perfect for those following a keto diet.


Ingredients

  • 3 large eggs
  • 1 cup cream cheese, softened
  • 1/4 cup powdered erythritol
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, separate the egg whites from the yolks, placing the whites in one bowl and the yolks in another.
  3. Add the softened cream cheese, powdered erythritol, vanilla extract, and salt to the egg yolks. Mix until smooth and well combined.
  4. Using a hand mixer or stand mixer, beat the egg whites until stiff peaks form.
  5. Gently fold the egg whites into the yolk mixture, being careful not to deflate the whites.
  6. Spoon the mixture onto the prepared baking sheet in small mounds, creating individual cloud cake shapes.
  7. Bake in the preheated oven for 25-30 minutes, or until the clouds are golden and set.
  8. Remove from the oven and let cool for a few minutes before serving.
