- 2 cups shredded cooked chicken
- 1 cup shredded cheddar cheese
- 1 cup low-carb enchilada sauce
- 1 small onion, diced
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 8 small low-carb tortillas
- Fresh cilantro (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the shredded chicken, diced onion, garlic powder, cumin, chili powder, and half of the cheddar cheese. Mix well.
- Pour a small amount of enchilada sauce into the bottom of a 9×13 inch baking dish.
- Take each low-carb tortilla and fill it with the chicken mixture, then roll it up and place it seam-side down in the baking dish.
- Once all the enchiladas are arranged in the dish, pour the remaining enchilada sauce over the top.
- Sprinkle the remaining cheddar cheese over the enchiladas.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
- Garnish with fresh cilantro before serving.
Notes
- For a spicier version, add diced jalapeños to the chicken mixture.
- Can be made ahead of time and frozen before baking.
