Description

Keto Chicken Enchiladas are a delicious and satisfying dish that caters to your dietary needs while still delivering flavor.


Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheddar cheese
  • 1 cup low-carb enchilada sauce
  • 1 small onion, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 8 small low-carb tortillas
  • Fresh cilantro (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, diced onion, garlic powder, cumin, chili powder, and half of the cheddar cheese. Mix well.
  3. Pour a small amount of enchilada sauce into the bottom of a 9×13 inch baking dish.
  4. Take each low-carb tortilla and fill it with the chicken mixture, then roll it up and place it seam-side down in the baking dish.
  5. Once all the enchiladas are arranged in the dish, pour the remaining enchilada sauce over the top.
  6. Sprinkle the remaining cheddar cheese over the enchiladas.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Remove from the oven and let cool for a few minutes before serving.
  9. Garnish with fresh cilantro before serving.

Notes

  • For a spicier version, add diced jalapeños to the chicken mixture.
