Description

Keto Buffalo Chicken Quesadilla is a deliciously spicy and cheesy treat that is low in carbs and perfect for your keto diet.


Ingredients

  • 2 cups shredded cooked chicken
  • 1/2 cup buffalo sauce
  • 2 cups shredded mozzarella cheese
  • 2 large eggs
  • 1/4 cup cream cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the shredded chicken with buffalo sauce. Mix until the chicken is well coated.
  3. In another bowl, whisk the eggs, cream cheese, garlic powder, onion powder, salt, and pepper until smooth.
  4. Pour the egg mixture into a heated non-stick skillet over medium heat, swirling to form a round pancake shape.
  5. Cook for about 2-3 minutes until the edges begin to set, then sprinkle half of the mozzarella cheese on one half of the egg pancake.
  6. Add the buffalo chicken mixture on top of the cheese, followed by the remaining mozzarella cheese.
  7. Fold the egg pancake over to create a quesadilla and cook for another 2-3 minutes until the cheese is melted and the pancake is golden brown.
  8. Carefully transfer the quesadilla to a baking dish and bake for 5-7 minutes until heated through.
  9. Remove from the oven and let cool for a couple of minutes before slicing.
  10. Garnish with chopped green onions if desired and serve with additional buffalo sauce.
