- 2 cups almond flour
- 1/4 cup coconut flour
- 1/2 cup unsalted butter, softened
- 4 large eggs
- 1/4 cup erythritol sweetener
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
- In a large mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt.
- In a separate bowl, beat the eggs and then add the softened butter and vanilla extract. Mix until well combined.
- Gradually add the wet mixture to the dry ingredients, stirring until a smooth batter forms.
- Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Slice and serve as desired.
