Ingredients

  • 1/4 cup coconut flour
  • 1/2 cup unsalted butter, softened
  • 4 large eggs
  • 1/4 cup erythritol sweetener
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. In a large mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt.
  3. In a separate bowl, beat the eggs and then add the softened butter and vanilla extract. Mix until well combined.
  4. Gradually add the wet mixture to the dry ingredients, stirring until a smooth batter forms.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  8. Slice and serve as desired.
