Ingredients

  • 1 cup cottage cheese
  • 1 cup spinach, chopped
  • 1 bell pepper, diced
  • 1/2 cup shredded cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a muffin tin with olive oil or cooking spray.
  3. In a large bowl, crack the eggs and whisk them until well beaten.
  4. Add the cottage cheese to the beaten eggs and mix until combined.
  5. Stir in the chopped spinach, diced bell pepper, and shredded cheese (if using).
  6. Season the mixture with salt and pepper to taste.
  7. Pour the egg mixture evenly into the prepared muffin tin, filling each cavity about 3/4 full.
  8. Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the muffins are set and golden on top.
