- 1 cup cottage cheese
- 1 cup spinach, chopped
- 1 bell pepper, diced
- 1/2 cup shredded cheese (optional)
- Salt and pepper to taste
- Olive oil or cooking spray (for greasing)
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a muffin tin with olive oil or cooking spray.
- In a large bowl, crack the eggs and whisk them until well beaten.
- Add the cottage cheese to the beaten eggs and mix until combined.
- Stir in the chopped spinach, diced bell pepper, and shredded cheese (if using).
- Season the mixture with salt and pepper to taste.
- Pour the egg mixture evenly into the prepared muffin tin, filling each cavity about 3/4 full.
- Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the muffins are set and golden on top.
- Remove from the oven and allow the muffins to cool for a few minutes before carefully removing them from the tin.
- Serve warm or store in an airtight container for later use.
