Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, combine the cottage cheese, eggs, and olive oil. Mix well until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, salt, and black pepper.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  5. If using, fold in the grated cheese and chopped herbs for added flavor.
  6. Evenly distribute the batter into the prepared muffin tin, filling each cup about 3/4 full.
  7. Bake in the preheated oven for 20-25 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
