- 2 large eggs
- 1 cup all-purpose flour
- 1/2 cup grated cheese (optional)

- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon honey or maple syrup (optional)
Instructions
- Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, combine the cottage cheese, eggs, and olive oil. Mix well until smooth.
- In a separate bowl, whisk together the flour, baking powder, salt, and black pepper.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- If using, fold in the grated cheese and chopped herbs for added flavor.
- Evenly distribute the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake in the preheated oven for 20-25 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
