  • 1 lb ground beef or lamb (90% lean)
  • 1 medium onion (chopped)
  • 2 tbsp butter
  • 1/2 tsp Italian seasoning
  • 2 tbsp tomato paste
  • 2 tbsp flour
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp salt
  • 2 cups frozen mixed vegetables (peas, carrots, corn, and green beans)

For the Mashed Potatoes:

  • 2.5 lbs Russet potatoes (peeled and quartered)
  • 1/2 cup heavy cream
  • 1/4 cup butter (1/2 stick)
  • 3 cloves garlic (minced)
  • 1/2 tsp salt
  • Pepper (to taste)

Optional garnish: fresh parsley, chopped.


Instructions

Step1: Prepare the Potatoes

  • Peel and quarter the potatoes. Boil until tender.
  • In a saucepan, heat butter, cream, garlic, salt, and pepper until melted and warmed.
  • Drain the potatoes, then mash with the cream mixture until smooth.

Step2: Cook the Filling

  • Preheat your oven to 375°F.
  • In a skillet, melt butter and sauté the chopped onion until softened.
  • Add the ground beef and cook until browned.
  • Mix in Italian seasoning, tomato paste, and flour, stirring continuously.
  • Pour in the beef broth and Worcestershire sauce, scraping the pan’s bottom. Let it thicken slightly.

Step3: Assemble and Bake

  • Stir the frozen vegetables into the meat mixture and cook for 5 minutes.
  • Transfer the filling to a 9×13 casserole dish. Spread evenly.
  • Layer the mashed potatoes over the filling. Use a fork to create textured ridges.
  • Bake uncovered for 30 minutes, then broil briefly to brown the potato topping.
