A delicious low-carb cloud bread featuring the flavors of cinnamon and cottage cheese, perfect for a keto diet.

- 1 cup cottage cheese
- 3 large eggs
- 1/4 cup almond flour
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 tablespoon cinnamon
- 1 tablespoon sweetener of choice (e.g., erythritol)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the cottage cheese and eggs, and blend until smooth using an immersion blender or a standard blender.
- Add the almond flour, baking powder, vanilla extract, sweetener, and cinnamon to the mixture, and blend again until fully incorporated.
- Pour half of the cloud bread mixture onto the prepared baking sheet, spreading it out evenly.
- In a small bowl, combine 1 tablespoon of cinnamon and 1 tablespoon of sweetener for the swirl. Sprinkle this mixture over the first layer of cloud bread.
- Pour the remaining cloud bread mixture over the cinnamon layer and gently swirl with a knife to create a marble effect.
- Bake in the preheated oven for 25-30 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Once baked, remove from the oven and let it cool for a few minutes before slicing and serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to a week.
- Can be frozen for longer storage; make sure to wrap it well.
