Ingredients

  • 1 cup cottage cheese
  • 3 large eggs
  • 1/4 cup almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 tablespoon cinnamon
  • 1 tablespoon sweetener of choice (e.g., erythritol)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the cottage cheese and eggs, and blend until smooth using an immersion blender or a standard blender.
  3. Add the almond flour, baking powder, vanilla extract, sweetener, and cinnamon to the mixture, and blend again until fully incorporated.
  4. Pour half of the cloud bread mixture onto the prepared baking sheet, spreading it out evenly.
  5. In a small bowl, combine 1 tablespoon of cinnamon and 1 tablespoon of sweetener for the swirl. Sprinkle this mixture over the first layer of cloud bread.
  6. Pour the remaining cloud bread mixture over the cinnamon layer and gently swirl with a knife to create a marble effect.
  7. Bake in the preheated oven for 25-30 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Once baked, remove from the oven and let it cool for a few minutes before slicing and serving.
