Ingredients

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach, fresh
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season the salmon fillets with salt and pepper and add them to the skillet, cooking for about 4-5 minutes on each side until golden brown and cooked through.
  3. Remove the salmon from the skillet and set aside.
  4. In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.

  8. Return the salmon to the skillet, spooning the creamy sauce over the top.
  9. Let it cook for an additional 2 minutes to heat through.
  10. Serve hot, garnished with grated Parmesan cheese.
