Cauliflower Hash Browns are a delicious and healthy alternative to traditional hash browns, perfect for breakfast or as a side dish.
Ingredients

- 1 medium cauliflower head
- 1/2 cup shredded cheddar cheese
- 1/4 cup green onions, chopped
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1 egg, beaten
- 1/2 cup almond flour (or regular flour)
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Remove the leaves and stem from the cauliflower. Cut it into smaller florets and pulse them in a food processor until they resemble rice.
- Transfer the cauliflower rice to a clean kitchen towel and wring out as much moisture as possible.
- In a large mixing bowl, combine the cauliflower rice, shredded cheddar cheese, chopped green onions, garlic powder, onion powder, salt, pepper, beaten egg, and almond flour. Mix until well incorporated.
- Form the mixture into small patties and place them on the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the hash browns are golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
Notes
- Great for meal prep and can be stored in the refrigerator.
