Description

Cauliflower Hash Browns are a delicious and healthy alternative to traditional hash browns, perfect for breakfast or as a side dish.


Ingredients

  • 1 medium cauliflower head
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1 egg, beaten
  • 1/2 cup almond flour (or regular flour)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Remove the leaves and stem from the cauliflower. Cut it into smaller florets and pulse them in a food processor until they resemble rice.
  3. Transfer the cauliflower rice to a clean kitchen towel and wring out as much moisture as possible.
  4. In a large mixing bowl, combine the cauliflower rice, shredded cheddar cheese, chopped green onions, garlic powder, onion powder, salt, pepper, beaten egg, and almond flour. Mix until well incorporated.
  5. Form the mixture into small patties and place them on the prepared baking sheet.
  6. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the hash browns are golden brown and crispy.
  7. Remove from the oven and let cool slightly before serving.
