- 1 cup almond flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup sugar-free chocolate chips
- 1/4 cup unsweetened cocoa powder
- 1/4 cup sweetener of your choice
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup almond butter
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine almond flour, shredded coconut, cocoa powder, sweetener, and salt. Mix well.
- In a separate bowl, whisk the egg and vanilla extract together until well combined.
- Add the egg mixture and almond butter to the dry ingredients. Stir until fully integrated.
- Fold in the sugar-free chocolate chips until evenly distributed in the dough.
- Using a tablespoon, scoop the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
