Description

Delicious Almond Joy Cookies made with almond flour, coconut, and chocolate chips, perfect for a healthy treat.


Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup sugar-free chocolate chips
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup sweetener of your choice
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup almond butter

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine almond flour, shredded coconut, cocoa powder, sweetener, and salt. Mix well.
  3. In a separate bowl, whisk the egg and vanilla extract together until well combined.
  4. Add the egg mixture and almond butter to the dry ingredients. Stir until fully integrated.
  5. Fold in the sugar-free chocolate chips until evenly distributed in the dough.
  6. Using a tablespoon, scoop the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
